For Frankie Solarik’s second act, he did away with the smoke, dry ice and other theatrics that helped build BarChef’s reputation. This West Queen West bar instead looks towards herbs, potions and other old-school apothecary staples. Guests enter via a chemist storefront and flip through a menu of cocktails that employ house-made bitters, hydrosols, spices and fresh herbs. Many are extracted from vintage-style jars on the backbar and mortar-crushed to order. Drinks, like the Champagne & Absinthe (vodka, St-Germain, Champagne, lemon, basil, cucumber, celery, fennel, ylang ylang), lean into that. Prequel is still a BarChef joint, though, so expect more than a little showmanship, plus Solarik’s signature ’90s hip-hop playlist.
