Leisure Noise Cocktail

This fragrant rum-based libation from John Bunner, Operations Manager at Alo, Aloette, and Alobar in Toronto, is garnished with a bundle of herbs tied together with lemon peel—inspired by a bouquet garni used for flavouring stocks and stews.

 

Leisure Noise Cocktail

INGREDIENTS:

  • 1 oz Havana Club 7 rum
  • 1 oz Tio Pepe Fino sherry
  • 1⁄3 oz crème de banane
  • 1⁄2 oz simple syrup
  • 3⁄4 oz lime juice
  • 2 dashes Angostura bitters
  • Handful of mint, basil, cilantro, thyme

GARNISH:

  • Sprig of thyme
  • Remaining mint, basil, cilantro
  • Strip of lemon peel

METHOD:

Reserve one sprig each of the mint, basil, cilantro, and thyme, tie together with lemon peel and set aside. Transfer all remaining ingredients to an ice-filled cocktail shaker. Shake and strain into a coupe glass. Garnish with herb bouque.
