This past year, this small-business owner pivoted his restaurants to adapt to consumer needs and rapidly changing market conditions, finding inventive, exciting ways to share his culinary talents with diners. Looking beyond delivery apps and takeout, his restaurants’ servers and staff hand-delivered DIY Rum Punch Kits and Heat n’ Serve Care Packages to customers on intercity “Patois delivery tours,” providing personal connections during a time of social distancing. Wong also developed meal kits that customers could prepare at home, introduced delivery-friendly food specials and launched Patois-branded merchandise.
