At Frankie Solarik’s original theatrically dark, chic lounge on Queen West, the modernist drinks are multi-sensory art installations. Take the Flavours of Iridescence, a nod to the Ramos Gin Fizz, deconstructed into absinthe candy floss, pastis parfait and a cryo-poached wafer. The spectacle isn’t limited to the drinks. Almost 15 years after he opened, Solarik still puts on a riveting show, both behind his own bars (his other spots are Prequel & Co. Apothecary and Bar Compton) and as an exacting judge on Netflix’s Drink Masters.
