Sayonara, H. We salute the irreverent barman, with a reverential middle finger (as he often greeted regulars). His April 1 departure (no joke) marked the end of an era for this cozy room behind the barbershop on the Ossington strip. The reopened Shop is helmed by Mike Lamantia, from Bar Koukla across the street, mixing a strong list of house originals and bulletproof classics. The $1,650 Louis XIII Sazerac isn’t going anywhere.

The Cornstar Martini (roasted-corn pisco, reposado tequila, passion fruit, corn milk and Parmesan foam).
The new era includes (previously verboten) vodka.
Patrons must still refrain from being “a dick.”
